I've decided to share some of my favorite recipes as I feel that all good recipes should be out there for all to enjoy!
Recipe for Happiness
I have a little recipe that isn’t hard to make but you must always start as soon as you awake. Take a great big mixing bowl and fill it with a smile. Mix half a cup of sunshine with good deeds to last a while. Add a pinch of work and play, a pinch of thoughtfulness and care. But don’t bake it in the oven, just spread it everywhere.
Margherita Pizza-one word-AMAZING!!!!!
- 12 inches thin pizza crust (I use Boboli 12-inch thin crust)
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, finely chopped
- 3 -4 large basil leaves, cut into strips
- 2 small tomatoes, cut thinly
- 4 ounces mozzarella cheese, shredded
- 2 tablespoons parmesan cheese
- salt and pepper, to taste
- crushed red pepper flakes, to taste
- 1 Preheat the oven to 450°F.
- 2 Drizzle the olive oil over the pizza shell. Use a brush to spread it around and make sure to get the crust!
- 3 Next, disperse the finely chopped garlic evenly.
- 4 Spread the mozzarella cheese throughout the top, but keep it thin.
- 5 Place the thinly sliced tomatoes across the entire pizza.
- 6 Lightly salt and pepper the tomatoes with the kosher salt.
- 7 Spread the fresh basil leaves, making sure to get some on tomatoes and on just the cheese itself.
- 8 Cook the pizza in the oven for about 9-10 minutes, or until sufficiently crispy and melted to your liking.
- 9 Add a little Parmesan cheese and (optional) crushed red pepper and enjoy!
Slow Cooker Beef Stroganoff
2 pounds beef stew meat
1 cup chopped onion
1 can (10 3/4 ounces) condensed cream of golden mushroom soup
1 can (10 3/4 ounces) condensed cream of onion soup
1 jar (6 ounces) Green Giant® sliced mushrooms, drained
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, cubed
1 container (8 ounces) sour cream
6 cups hot cooked noodles or rice
In 3 1/2- to 4 1/2-quart slow cooker, mix beef, onion, soups, mushrooms and pepper.
2 Cover and cook on low heat setting 8 to 10 hours or until beef is very tender.
3 Stir cream cheese into beef mixture until melted. Stir sour cream into beef mixture. Serve over noodles.
Bagel Dip
1 (16 ounce) container sour cream
2 cups mayonnaise
2 tablespoons monosodium glutamate (MSG)
2 tablespoons dried dill weed
2 tablespoons dried parsley
1 onion, chopped
2 (2 ounce) packages dried beef, chopped
In a medium bowl, mix the sour cream, mayonnaise, monosodium glutamate (MSG), dill, parsley, onion and dried beef. Refrigerate 1 hour, or until thickened and chilled. Serve with bagel pieces.
ABSOLUTELY AWESOME Pumpkin Pie Crunch
Seriously.. this is a must try!
Mix the following
1 16 oz. pumpkin
12 oz evap milk
3 eggs
1 1/2 c sugar
4 tsp pumpkin pie spices
Grease a 9 X 13 pan, pour in the mixture.
Sprinkle 1 Yellow Cake mix over the mixture (I like to work it and break up the bigger chunks first before I sprinkle it over the mixture)
Sprinkle 1 c toasted chopped pecans on top
Melt then pour over the top 1 c margarine or butter
Bake 350 for 50-55 minutes.
Cool to room temp and serve with a dallop of cool whip.
Mix the following

Shredded Turkey Sandwiches
15-20lb turkey
5 cups broth (this comes from the cooked turkey)
1/4 lb butter
1 lbs Velveeta Cheese
Cook turkey with 2 qts or more of water
De-bone and shred
Save broth
Melt Velveeta and butter together with broth and pour over the shredded turkey
Stir occasionally
Crostini’s
Mix:
16 oz Sour Cream
16 oz Cream Cheese
8 oz ranch dressing (liquid)
1 onion, chopped
Spread over sliced French bread. Top with shredded cheese, chopped green pepper, and chopped tomato.
Yummy Pretzel Dip
2 8oz. packages of softened cream cheese
Ranch Packet
1 ½ cup cheddar cheese
4 oz. beer
Mix all together and serve with pretzels!!!
Fancy Jello
1-l0 oz pkg of berries; ie strawberries, rasberries
1-6 0z pkg of jello; ie pick the jello that goes with your berry choice
1- ¼ cup boiling water
1 pint vanilla ice cream
1-6oz can pink lemonade
Thaw your berries and save the berry juice. Thaw your lemonade as well
Dissolve jello in water, stir well. Add small amounts at a time of the ice cream until all dissolved
Add in your pink lemonade and reserve fruit juice
Put in frig and get it to almost set and put the berries on top of that.
Better if made the day b/4 and just leave in frig. Just put it in a decorative glass bowl and serve that way
Fiesta Ranch Chip Dip
1 package dry fiesta ranch dip
16 oz. light sour cream
1 small can chopped olives
1/2 green bell pepper chopped in small pieces
1 small can green chilies diced
1 cup finely shredded cheddar cheese
Combine in bowl and serve with tortilla chips

Cinnamon French Toast Bake
2 12oz Pillsbury Cinnamon rolls Tubs
¼ C Melted Butter
6 Eggs
½ C Heavy Whipping Cream
2t. Cinnamon
2t. Vanilla
1C Syrup
Pecans if desired
Preheat oven to 375. Melt butter and pour into 9x13 pan, cut cinnamon rolls in 6 pieces and place into butter. Beat eggs, add whipping cream mix well. Add cinnamon and vanilla mix. Pour over cinnamon rolls, drizzle syrup.
Bake for 20-25 minutes.
Cools for 10 mins. Place frosting (this comes with the rolls) in microwave and heat for 10-20 seconds, drizzle over cinnamon rolls.

Santa Fe Soup
1 lb of browned ground beef
1 pkg dry ranch dressing
1 pkg taco seasoning
1 medium onion diced
1 can of chili beans,
1 can of pinto beans
1 can of black beans
1 can of shoepeg corn
2 cans of diced tomatoes with green chili’s (rotel)
1 cup of water
Dump it all together in a pot and simmer for a while…. Serve over rice, Doritos, shredded cheese and sour cream. *I don’t like beans-so I add very little**
Beef and Blue Sandwiches
Blue Cheese Spread:
1 1/2 packages (8 oz.) cream cheese softened
8 oz. sour cream
6 oz. crumbled gorgonzola
Carmelized onion:
3 Tbs olive oil
3 large sweet onion thinly sliced
2 Tbs brown sugar
1 1/2 lbs. deli sliced roast beef warmed
6-7 sandiwch rolls
Mix blue cheese spread in bowl and chill for at least two hours.
To prepare onoins heat pan to med. add olive oil. Saute onion until tender-add brown sugar. Set aside for assembling sandwich,
Assembling Sandwiches:
Split rolls in half. Lightly toast open face in oven. Spread cheese on top and bottom of rolls. Place warmed roast beef on bottom of roll. Cover with onions and place top of roll on sandwich.

1 pkg. or 1 pound frozen sweet corn
2 Tbls. olive oil
1 cup fresh cilantro-chopped
1/2 cup red onion
3 roma tomatoes-chopped
2 jalapeno peppers chopped finely
1 red pepper chopped
2 tsp. garlic
2 cans black beans (drained and rinsed)
3 large avocados peeled and cut
Dressing:
1 Tbls. salt
3/4 tsp. cumin
6 Tbls. lime juice
5 Tbls. olive oil
2 Tbls. vinegar
Brown corn with the 2 Tbls. olive oil at 450 degrees. Stir often and cool. Mix everything together. Pour dressing over the veggies. If not going to use right away, keep corn and avocado out until ready.
2 Tbls. olive oil

BBQ Sloppy Jo's
1 lb hamburger
1 onion or dash of salt
4 Tbsp sugar
4 tbsp vinegar
1/2 tsp celery salt
1/2 tsp paprika
1/2 tsp dry mustard
1/2 cup ketchup
1 cup water
1/2 tsp chili powder
pepper to taste
I go easy on the sugar using only half of what the recipe calls for and then adding more if it needs it. I also add extra chili powder to give it a little kick.

1/2 tsp celery salt
1/2 tsp paprika
1/2 tsp dry mustard
1/2 cup ketchup

Sweet and Sour Meatballs
frozen cocktail meatballs any brand usually 60-80 in bag
Sauce:
¾ cup of Brown Sugar
1 jar of Chili Sauce
½ jar of water
1 can of Drained Sauerkraut
1 Can of Jelled Cranberries
Cook to mix,pour over meatballs
Heat in crockpot
Sauce:
¾ cup of Brown Sugar
1 jar of Chili Sauce
½ jar of water
1 can of Drained Sauerkraut
1 Can of Jelled Cranberries
Cook to mix,pour over meatballs
Heat in crockpot
Artichoke Dip
8 oz. cream cheese
1 cup Mayo (hellmans real mayo)
1 cup sour cream
1 cup parmesan cheese (not the green can stuff)
1 (14 oz) can artichoke hearts chopped
1 garlic clove
1 tsp dill
1/8 tsp salt
Combine all ingredients. Spoon into oiled pie plate. Bake at 375 degrees for 45-60 minutes until the top is golden brown.
Serve with tortilla chips, club crackers, celery, etc.

1 Cup Flour
4 eggs
Bring water and butter to a boil, take off heat. Stir in flour until it forms a ball. Add eggs one at a time and beat well after each egg. Spread in a greased 9x13 pan. Bake for 30-40 minutes @ 375 degrees. Cool.
Filling and Topping
11 oz cream cheese(room temp)
3 Cups milk
2- 3 ½ boxes instand French Vanilla pudding
12 oz Cool Whip
Chocolate syrup
Press crust down until even. Mix cream cheese with milk. Add instant pudding and mix with electric mixer on low speed until thick. Pour over crust. Spread Cool Whip on top. Drizzle With chocolate syrup. Refrigerate.
